RECIPE : -

* For the Marination of the chicken

Marinate the chicken It keeps the chicken soft and juicy after cooking it.

Step 1. Chicken : - 1 kg chicken with bone for best flavour. Make sure your chicken is freshly chopped.

Step 2. Yogurt/Curd : - I recommend adding hung curd or yogurt for a creamy gravy. You can put a muslin cloth over a strainer and pour curd over it. Cover it and keep it aside for 15 - 20 minutes. Use that curd to marinate the chicken.

Step 3. Ginger Garlic paste : - 2 table spoon

Step 4. Add Turmeric Powder

Step 5. Kashmiri Red Chilli Powder : Kashmiri red chilli powder gives the chicken gravy bright red color.

Step 6. and Salt

Cover it and keep it aside for 25 - 30 minutes.

* For Puree

5 big onions, 4 tomatoes, 3 - 4 green chillies all grind it in mixer together.

* For Gravy

1 . Heat Oil/ Ghee in a pressure cooker over the medium flame : - [ Ghee enhances the flavour and adds richness to the gravy.]

2 . Add Whole Spices : - Black pepper, 2 bay leaf, cloves, cinamon, black cardamom and green cardamom. Let the spices fry well and create a nice aroma.

3 . Next add tamato puree

4 . Saute the masala : - Saute the masala till it leaves its oil.

5 . Add chicken masala and kitchen King masala :- which adds more flavour in the gravy (I personally recommend to use Everest kitchen King masala and chicken masala)

6 . Add little more turmeric powder and kashmiri red chilli powder : because we already added these spices in the chicken marination.

7 . Add Cashew Paste : - Soake 25 - 30 cashew in hot water bowl before making its paste. Then sauted the cashew paste for 5 minutes.

8 . Now add Marinated Chicken , and saute it well for 5 - 7 minutes, keep in mind that the puree should be cooked well or else it wil have a raw smell.

9 . Put some kasoori methi powder and stir it well for 2 - 3 minutes.

10 . Water : Now add 2 cups of water.

11 . Stir to mix all the ingredients well with the chicken.

12 . Then pressure it for 2 whistles.

13 . At this time you can adjust the salt and spice if required.

14 . After then garnish your chicken gravy with fresh green coriander leaves, fresh cream , and with julienne ginger.

15 .Now Serve it with naan, lacha paratha, rumali roti, tandoori roti, normal chapati and rice.

Tada!
Your Gravy Chicken is ready
Enjoy!

Tips to make it right : -

1.Do not rush while cooking. It may need a little more time from you if you want to enjoy the authentic taste.

2.Don't set the heat too high.

3.For a juicier Gravy Chicken, marinate it for a good 30 minutes to one hour.

Instructions :-

1.Wash your chicken with clean water atleast twice.

2.Don't overcook the chicken, if it will be overcooked, it tastes not good.

3.Don't put water in the onion, tamato, and green chillies puree , and make sure it should be grind well.

Why marinate chicken before cooking?

It is not necessary to marinate chicken before cooking. Marinating simply imparts the flavour.
